Pecan Pie

8 L Eggs

2 C White Sugar

2 C Dark Karo Syrup

2 T Butter Melted

1 tsp Salt

2 tsp Pure Vanilla

2 C Chopped Pecans

2 Unbaked Pie Shells

Preheat oven to 325 degrees. In medium mixing bowl beat 8 large eggs for 1 minute. Add 2 cups of sugar and 2 cups of dark karo syrup and beat on high speed for 2 minutes. Add 2 tablespoons of melted butter, 1 teaspoon of salt, 2 teaspoons of vanilla extract and chopped pecans. Mix well to combine all ingredients. Divide and pour equally into 2 unbaked pie shells. Place pies in center oven rack and bake for 45 minutes until knife inserted in center comes out clean. Cool and refrigerate.
