This Chicken Grilled Cheese Sandwich features juicy pan-seared chicken seasoned with Igotchu Seasonings Adobo and Onion Garlic Pepper, layered with creamy American and rich Muenster cheese between buttery, golden toasted bread. It's an easy comfort food that's perfect for lunch or dinner.

Ingredients

  • 2 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon Igotchu Seasonings Adobo

  • 1 teaspoon Igotchu Seasonings Onion Garlic Pepper

  • 8 slices sourdough or Texas toast

  • 4 tablespoons softened butter

  • 8 slices American cheese

  • 4 slices Muenster cheese

  • Fresh parsley, chopped (optional garnish)

Instructions

1. Season the Chicken

Pat the chicken breasts dry and season both sides with Igotchu Seasonings Adobo and Igotchu Seasonings Onion Garlic Pepper.

2. Cook the Chicken

Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5–6 minutes per side, or until golden brown and the internal temperature reaches 165°F. Remove from the skillet and let rest for 5 minutes, then slice into thin strips.

3. Assemble the Sandwiches

Spread butter on one side of each slice of bread. Place four slices butter-side down on a clean surface. Layer each sandwich with:

  • 2 slices American cheese

  • Sliced seasoned chicken

  • 1 slice Muenster cheese

Top with the remaining bread slices, butter-side facing up.

4. Grill the Sandwiches

Wipe out the skillet if needed and return it to medium-low heat. Grill the sandwiches for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and crispy and the cheese is melted.

5. Serve

Slice each sandwich in half and garnish with fresh parsley if desired. Serve immediately while hot and cheesy.
