Instructions
Step 1: Cook the Shrimp
Bring a large pot of lightly salted water to a gentle boil. Add the shrimp and cook for 2-3 minutes, or until they turn pink and are just cooked through.
Drain immediately and transfer the shrimp to a bowl of ice water to stop the cooking process. Once cooled, drain well and pat dry with paper towels.
If using large shrimp, chop into bite-sized pieces.
Step 2: Make the Dressing
In a large mixing bowl, whisk together the mayonnaise, lemon zest, lemon juice, Dijon mustard, fresh dill, Igotchu Seasonings Garlic Lovers, and Igotchu Seasonings Himalayan Salt & Pepper until smooth and well combined.
Step 3: Assemble the Salad
Add the cooked shrimp, chopped red onion, and celery to the dressing.
Gently fold everything together until the shrimp are evenly coated.
Cover and refrigerate for 30 minutes to allow the flavors to blend.
Step 4: Serve
Serve chilled on butter lettuce leaves, croissants, sandwich rolls, crackers, or over a bed of fresh greens.
Garnish with additional fresh dill and lemon wedges if desired.
Igotchu Tip
For extra crunch, stir in a little diced cucumber or chopped green onion just before serving. This Shrimp Salad is perfect for meal prep and tastes even better after chilling for a few hours!
