Cook Time - 25 minutes
Servings 4–6
Ingredients
-
2 pounds potatoes, preferably Yukon Gold or red potatoes
-
6 slices bacon, chopped
-
1 medium yellow onion, finely diced
-
1/4 cup distilled white vinegar
-
6 ounces water (3/4 cup)
-
1 teaspoon Igotchu Greens Seasoning
-
1 teaspoon Igotchu Himalayan Salt & Pepper, or to taste
-
1 teaspoon Igotchu Garlic Lovers
-
1/4 cup fresh parsley, chopped
Instructions
1. Cook the potatoes
Wash the potatoes thoroughly and place them in a large pot. Cover with cold water and bring to a boil over medium-high heat.
Cook for approximately 15–20 minutes, depending on the size of the potatoes, until fork-tender but not falling apart.
Drain the potatoes and allow them to cool slightly. Cut into bite-sized pieces or thick slices, leaving the skins on if desired. Transfer to a large mixing bowl.
2. Cook the bacon
In a large skillet over medium heat, cook the chopped bacon until crispy and golden brown, approximately 6–8 minutes.
Using a slotted spoon, remove the bacon from the skillet and set aside, leaving about 2 tablespoons of bacon drippings in the pan for extra flavor.
3. Sauté the onions
Add the diced onions to the same skillet with the reserved bacon drippings.
Cook over medium heat for approximately 3–5 minutes, stirring occasionally, until the onions become soft and translucent.
Season with Igotchu Himalayan Salt & Pepper and Igotchu Garlic Lovers, stirring to coat the onions evenly.
Remove the onions from the skillet and set aside with the crispy bacon.
4. Prepare the Igotchu Greens broth
Using the same skillet that was used to cook the bacon and onions, pour in approximately 6 ounces of water.
Add 1 teaspoon Igotchu Greens Seasoning and stir well, scraping up the flavorful browned bits from the bottom of the skillet.
Bring the mixture to a gentle boil, then reduce the heat and allow it to simmer for approximately 2–3 minutes. This creates a delicious, savory broth infused with the flavors of the bacon, onions, and Igotchu seasonings.
5. Assemble the potato salad
Add the cooked bacon, sautéed onions, and freshly chopped parsley to the bowl of warm potatoes.
Pour in the distilled white vinegar and gently toss to distribute the tangy flavor throughout the potatoes.
6. Add the warm Greens broth
While the potatoes are still warm, carefully pour the hot Igotchu Greens broth over the potato salad.
Gently fold everything together, allowing the potatoes to absorb the flavorful liquid without breaking apart.
Let the salad rest for approximately 5 minutes so all the delicious flavors can come together.
7. Taste and serve
Taste the potato salad and adjust with additional Igotchu Himalayan Salt & Pepper, Garlic Lovers, or a splash of vinegar if desired.
Garnish with extra fresh parsley and serve warm!
Tips for the Best German Potato Salad
-
Choose the right potatoes: Yukon Gold or red potatoes work best because they hold their shape while remaining tender and creamy.
-
Don't overcook the potatoes: You want them fork-tender but firm enough to withstand mixing.
-
Save those bacon drippings: Cooking the onions and preparing the broth in the same skillet builds layers of savory flavor.
-
Dress the potatoes while warm: Warm potatoes absorb the vinegar and seasoned broth more effectively.
-
Adjust the tanginess: Start with slightly less vinegar if you prefer a milder flavor, then add more to taste.
-
Let the flavors develop: Allowing the potato salad to rest for a few minutes before serving helps everything come together.
-
Enjoy it warm or at room temperature: Unlike mayonnaise-based potato salads, this German-style version is especially delicious served warm. Refrigerate leftovers promptly.
