Instructions
Part 1: Prepare the Pork Schnitzel
1. Season the pork chops.
Pat the pork chops dry with paper towels. Season both sides evenly with Igotchu Adobo and No Salt Lemon Garlic Pepper. If needed, gently pound the pork chops to an even thickness for consistent cooking.
2. Prepare the breading station.
Set up three shallow dishes:
-
First dish: Igotchu Fried Coating Mix
-
Second dish: Eggs whisked together with water or milk
-
Third dish: Breadcrumbs
3. Bread the pork chops.
Dredge each pork chop in the Igotchu Fried Coating Mix, shaking off any excess. Dip into the egg mixture, making sure both sides are coated. Finally, press the pork chop into the breadcrumbs until evenly covered.
4. Fry until golden and crispy.
Heat approximately 1/4 inch of oil in a large skillet over medium to medium-high heat. Carefully add the breaded pork chops and fry for approximately 3–4 minutes per side, depending on thickness, until golden brown and crispy. The internal temperature should reach 145°F, followed by a 3-minute rest.
5. Set aside.
Transfer the cooked schnitzel to a wire rack to drain excess oil and keep the breading crispy while preparing the sauce.
Part 2: Prepare the Creamy Jäger Sauce
6. Sauté the mushrooms.
In a large skillet, melt the butter with the olive oil over medium heat. Add the sliced mushrooms and sauté for 5–7 minutes until golden brown and their moisture has mostly evaporated.
7. Add the onions and garlic.
Stir in the diced onions and cook for another 3–4 minutes until softened. Add the minced garlic and cook for approximately 30 seconds until fragrant.
8. Season the mushrooms.
Sprinkle in the Igotchu Himalayan Salt & Pepper and Garlic Lovers seasonings. Stir well to evenly coat the mushrooms and onions.
9. Add the white wine.
Pour in the white wine, scraping the bottom of the skillet to release any flavorful browned bits. Allow the wine to simmer for 2–3 minutes to reduce slightly.
10. Thicken the sauce.
In a small bowl, whisk the tablespoon of Igotchu Fried Coating Mix with 2 tablespoons of cold water until smooth. Pour the mixture into the skillet along with the remaining water, stirring continuously. Simmer for 3–5 minutes until the sauce begins to thicken.
11. Make it creamy.
Reduce the heat to low and stir in the heavy cream. Allow the sauce to simmer gently for another 2–3 minutes until smooth and creamy. Taste and adjust the seasonings if needed.
Part 3: Assemble and Serve
12. Bring it all together!
Place the crispy pork schnitzel on serving plates and generously spoon the warm, creamy mushroom Jäger sauce over the top. Garnish with freshly chopped parsley and serve with lemon wedges if desired.
Tips for the Best Schnitzel & Jäger Sauce
-
Keep your schnitzel crispy: Avoid overcrowding the skillet while frying, and drain the finished chops on a wire rack instead of stacking them.
-
Choose the right mushrooms: Cremini mushrooms provide a deeper, earthier flavor, but white button mushrooms work beautifully too.
-
Use a dry white wine: Pinot Grigio or Sauvignon Blanc adds a nice acidity that balances the rich cream sauce.
-
Adjust the sauce consistency: If the sauce becomes too thick, stir in a little additional water until it reaches your desired consistency.
-
Keep the sauce separate until serving: Spoon the sauce over the schnitzel just before eating to preserve that delicious crispy coating.
-
Check your coating mix: If your Fried Coating Mix is heavily seasoned or contains leavening, start with a smaller amount for thickening the sauce and adjust as needed.
