Tuna Melt

4 Slices Bread

2 T Butter Softened

6 oz. Flaked White Tuna Drained

1 Stalk of Celery Finely Diced

1 Green Onion Finely Sliced

2 T Sweet Relish

1/3 C Mayonnaise

1 tsp. Dijon Mustard

½ tsp Igotchu Seafood Seasoning

½ tsp. Fresh Lemon Juice

4 Slices Cheese, American or Cheddar

In medium bowl flake tuna with fork. Add diced celery, green onion, relish, mayonnaise, Dijon mustard, Igotchu seafood seasoning and lemon juice and mix well. Butter one side of each slice of bread. Heat large skillet or griddle over medium heat. Spread a few heaping tablespoons of tuna salad on bread non buttered side Place cheese on top of tuna salad and top with buttered slice of bread facing out. Place on hot skillet or griddle and fry until brown and crispy on one side, flip and repeat. Cut diagonally and serve
