Ingredients
- 1 pound raw shrimp, peeled, deveined, and chopped
- 8 ounces cream cheese, softened
- 1 cup shredded mozzarella cheese
- 2 green onions, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon Igotchu Onion Lovers Seasoning
- 1 teaspoon Igotchu Garlic Lovers Seasoning
- 1 teaspoon Igotchu Greens Seasoning
- ½ teaspoon Igotchu Himalayan Salt & Pepper Seasoning
- 1 tablespoon fresh parsley, chopped (optional)
- 12 egg roll wrappers
- 1 large egg, beaten (for sealing)
- Vegetable oil, for frying
Instructions
- Heat a skillet over medium-high heat with a small drizzle of oil. Add the chopped shrimp and season with the Igotchu Onion Lovers, Garlic Lovers, Greens, and Himalayan Salt & Pepper Seasonings. Cook for 2–3 minutes, just until the shrimp turn pink. Stir in the minced garlic during the last 30 seconds. Remove from the heat and let cool slightly.
- In a large bowl, combine the cream cheese, mozzarella cheese, green onions, parsley (if using), and cooked shrimp. Mix until well combined.
- Lay an egg roll wrapper on a clean surface in a diamond shape. Spoon 2–3 tablespoons of the filling onto the lower third of the wrapper.
- Fold the bottom corner over the filling, fold in both sides, then roll tightly toward the top corner. Brush the top corner with the beaten egg and press to seal. Repeat with the remaining wrappers.
- Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F. Fry the egg rolls in batches for 3–4 minutes, turning occasionally, until golden brown and crispy.
- Transfer the cooked egg rolls to a paper towel-lined plate to drain before serving.
Tips
- For an air fryer, preheat to 375°F, lightly spray the egg rolls with cooking oil, and cook for 8–10 minutes, flipping halfway through.
- To bake, preheat the oven to 400°F. Place the egg rolls on a parchment-lined baking sheet, lightly spray with cooking oil, and bake for 18–22 minutes, turning halfway through.
- Garnish with sesame seeds, chopped parsley, or sliced green onions for a beautiful presentation.
- Serve with sweet chili sauce, spicy mayo, garlic aioli, or ranch dressing.
- For a spicy twist, mix in ½ cup shredded sharp cheddar, a pinch of Igotchu Cajun Seasoning, or diced jalapeños before rolling.
