Sweet pineapple, crisp cucumber, fresh mint, and zesty lime blend together to create a cool, refreshing cocktail that's bursting with tropical flavor. Light, vibrant, and incredibly refreshing, it's the perfect drink for warm summer days.

Ingredients

  • 1 large English cucumber, cut into chunks
  • 2 cups fresh pineapple, chopped
  • ½ cup freshly squeezed lime juice (about 4–5 limes)
  • 2-inch piece fresh ginger, peeled
  • 10 fresh mint leaves
  • 3 cups cold water
  • 2–4 tablespoons Igotchu Seasonings Pineapple Lemonade
  • 1 ounce gin or vodka per serving (optional)
  • Ice cubes
  • Fresh mint sprigs and pineapple wedges, for garnish (optional)

Instructions

  1. In a high-powered blender, combine the cucumber, pineapple, lime juice, ginger, mint leaves, and water. Blend until completely smooth.
  2. Add Igotchu Seasonings Pineapple Lemonade and blend for another 10–15 seconds, adjusting the sweetness to your taste.
  3. Place a fine-mesh strainer over a large bowl or pitcher and pour the mixture through the strainer to remove the pulp.
  4. Fill a pitcher with ice and pour in the strained fresca.
  5. To serve, fill each glass with ice. For a cocktail, add 1 ounce of gin or vodka to each glass before pouring in the Pineapple Cucumber Fresca. Stir gently and garnish with fresh mint and a pineapple wedge, if desired.

Tips

  • For the freshest flavor, use ripe pineapple and freshly squeezed lime juice.
  • Prefer a non-alcoholic version? Simply omit the gin or vodka for a delicious tropical agua fresca.
