Ingredients
- 1 large English cucumber, cut into chunks
- 2 cups fresh pineapple, chopped
- ½ cup freshly squeezed lime juice (about 4–5 limes)
- 2-inch piece fresh ginger, peeled
- 10 fresh mint leaves
- 3 cups cold water
- 2–4 tablespoons Igotchu Seasonings Pineapple Lemonade
- 1 ounce gin or vodka per serving (optional)
- Ice cubes
- Fresh mint sprigs and pineapple wedges, for garnish (optional)
Instructions
- In a high-powered blender, combine the cucumber, pineapple, lime juice, ginger, mint leaves, and water. Blend until completely smooth.
- Add Igotchu Seasonings Pineapple Lemonade and blend for another 10–15 seconds, adjusting the sweetness to your taste.
- Place a fine-mesh strainer over a large bowl or pitcher and pour the mixture through the strainer to remove the pulp.
- Fill a pitcher with ice and pour in the strained fresca.
- To serve, fill each glass with ice. For a cocktail, add 1 ounce of gin or vodka to each glass before pouring in the Pineapple Cucumber Fresca. Stir gently and garnish with fresh mint and a pineapple wedge, if desired.
