These Shrimp & Bacon Ranch Lettuce Boats are fresh, creamy, and packed with flavor. Juicy seasoned shrimp, crispy bacon, creamy avocado, and fresh vegetables are tossed with a homemade ranch dressing and served in crisp butter lettuce leaves. They're perfect for a light lunch, healthy dinner, or refreshing appetizer.

Ingredients

  • 1 head butter lettuce, leaves separated and washed

  • 1 lb raw shrimp, peeled and deveined

  • 6 slices bacon, cooked and crumbled

  • 1 avocado, diced

  • 6 cherry tomatoes, halved

  • ¼ cup red onion, finely diced

  • 1 tablespoon olive oil

  • 1 teaspoon Igotchu Seasonings Seafood

  • ½ teaspoon Igotchu Seasonings Himalayan Salt & Pepper

Creamy Ranch Dressing

  • ¼ cup plain Greek yogurt or sour cream

  • 2 tablespoons mayonnaise (optional, for a richer dressing)

  • ½ tablespoon Igotchu Seasonings Ranch

  • 1 teaspoon fresh lemon juice

  • 1–2 teaspoons water or milk (if needed to thin)

Instructions

  1. Cook the Bacon
    Cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate, allow to cool, then crumble into bite-sized pieces.

  2. Season the Shrimp
    Pat the shrimp dry with paper towels. Toss with the olive oil, Igotchu Seasonings Seafood, and Igotchu Seasonings Himalayan Salt & Pepper until evenly coated.

  3. Cook the Shrimp
    Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2–3 minutes per side, or until pink and fully cooked. Remove from the skillet and allow to cool slightly.

  4. Prepare the Ranch Dressing
    In a small bowl, whisk together the Greek yogurt (or sour cream), mayonnaise, Igotchu Seasonings Ranch, lemon juice, and a splash of water or milk if needed until smooth and creamy.

  5. Prepare the Filling
    In a large bowl, combine the cooked shrimp, crumbled bacon, avocado, cherry tomatoes, and red onion.

  6. Mix Everything Together
    Add about half of the ranch dressing to the shrimp mixture and gently fold together until evenly coated. Reserve the remaining dressing for serving.

  7. Assemble the Lettuce Boats
    Spoon the shrimp mixture evenly into the butter lettuce leaves.

  8. Finish & Serve
    Drizzle with the remaining ranch dressing and serve immediately while the lettuce is crisp and fresh.
