Grilled Shrimp Salad

Grilled Shrimp Salad

1 lb. Medium Shrimp Peeled and Deveined

1 Clove Garlic Minced

1 Lemon Zest

½ tsp. Igotchu Lemon Garlic Pepper

2 T Olive Oil

2 C Shredded Romaine Lettuce

1 Cucumber Seeds Removed Chopped

1 Green Onion Sliced Thin

1 C Cherry Tomatoes Halved

1 Yellow Bell Pepper Cleaned and Sliced Thin

1 Avocado Diced 

Place cleaned shrimp in large bowl. To shrimp add fresh minced garlic, fresh lemon zest, olive oil and Igotchu lemon garlic pepper seasoning. Toss all well to coat cleaned shrimp. Let marinade for 10 to 15 minutes while cleaning and chopping veggies. Preheat grill, griddle or heavy pan oiled over medium high heat.  Place 4 to 6 marinated shrimp on skewers. Cook skewered shrimp 2 to 3 minutes per side and remove. Place shredded lettuce on 2 plates. Top salad with chopped cucumbers, green onion, cherry tomato halves, sliced yellow bell pepper and avocado.  Use dressing of your choice remove shrimp from skewers and top salad.
